A friendly welcome and service with a smile, the chef takes an old-school approach to cooking, having learned all about discipline, the importance of the ingredients and a job well done. It?s all about country cooking, the market and the seasons, which he masters to perfection. No doubt because he sources primarily from good suppliers for ultra-fresh produce, like the bundles of mussels and foie gras, local fish and even the round loaves of country-style bread made especially for La Grassinais, which is sliced on demand.
